This happens to be one of my favorite side dishes. I have been known to eat it by itself, without a main course. I bring a little ‘soul’ by adding sweet onions, sweet red peppers and a splash of balsamic vinegar before serving. My favorite recipes have very few ingredients and this one fits that bill.
